
Tasneem Patels Flavourful Chicken Curry

Ingredients:
- 3 tablespoons oil
- 1 teaspoon whole cumin
- 3 whole black peppers
- 3-4 whole spices (1 cinnamon stick, 3 cloves, 2 cardamom pods)
- 2 whole green chillies sliced
- 2 large onions chopped
- 1 kg chicken cut into pieces (available at Plan B)
- 2 tablespoons crushed ginger
- 1 tablespoon crushed garlic
- 1½ teaspoon salt (adjust to taste)
- ½ teaspoon tumeric powder
- ½ cup chopped coriander
- 2 tablespoons red masala paste (can be omitted)
- ½ teaspoon cumin powder
- 3 teaspoons coriander powder
- 1 tablespoon chilli powder
- 1 teaspoon Kashmiri powder
- 1 cup crushed tomatoes
- 1-2 cups water (adjust as needed for consistency)
- 3 medium potatoes fried
Method:
1. Heat oil in a pot and add whole cumin, whole black peppers, whole spices, and sliced chillies. Allow them to sizzle and release their aroma. Add chopped onions and braise until golden brown.
2. Add the chicken pieces, followed by crushed ginger, garlic, salt, and tumeric powder. Mix well and braise for 10 minutes.
3. Stir in chopped coriander and red masala paste. Add cumin powder, coriander powder, chilli powder, and Kashmiri powder. Mix and taste for salt, adjusting if needed.
4. Once the spices are well braised, add crushed tomatoes and 1 cup of water. Lower the heat and simmer for a few minutes. Add more water as needed to reach your desired consistency.
5. Add fried potatoes to the curry, mix well, and place the lid on the pot. Let the curry cook until the oil rises to the surface.
6. Finish with freshly chopped coriander and serve with hot roti or rice.
